Are cauliflours worth waiting for?

several dinners worth in one head
I am rich in cauliflours at the moment. And they are really nice though I didn't spot the first ones in time and they are gone too far now. By my recknoing the seeds were sown last August, the plants overwintered successfully, took off again about a month ago and are now producing lovely picture perfect heads. But is it all worth it?
Seven months from seed to harvest, each an enormous plant that needs 2ft of a spacing, and only one head per plant-that once you cut it off and bring it inside means the rest is now useless! Maybe it depends how much you love cauliflours. You can start sowing the first batches now-just remember how long you will have to wait to eat them!!
